Lion's Mane Apple Loaf

Ingredients

Caramel Base

  • 25g butter
  • 85g demerara sugar
  • 1 apple finely sliced

 

Sponge

  • 75g butter
  • 200g self raising flour
  • 100g caster sugar
  • 2 tsp cinnamon
  • 2 tsp lions main powder
  • 2 tsp vanilla bean paste
  • 1 apple cubes
  • ½ cup raisins
  • 3 eggs

Decoration

  • 1 apple finely sliced
  • Icing sugar (to dust)

Directions

Line a loaf tin and preheat oven to 180 °C

Melt butter and demerara sugar until a carmel has formed.

Pour into tin and carefully place the apple slices over the caramel.

Combine all the sponge ingredients, apart from the raisin and apple cubes, beat until thoroughly combined.

Fold in raisins and apple cubes.

Pour over the caramel and apple slices.

Carefully place your decorative apple slices on top and bake for 40-50 minutes (until a tooth pick comes out clean).

Leave to cool completely before removing from tin.

Dust with icing sugar and enjoy!
